METHOD
OF PREPARATION
1. Cut mozzarella cheese into thick slices (one
and a half inch square with one cm thickness). Sieve refined flour.
Roast peppercorns and crush lightly. Clean, wash and chop parsley
leaving a few leaves for garnish.
2. Mix refined flour, cornstarch, salt, crushed
peppercorns and sufficient quantity of water in a bowl and mix to
make a batter of coasting consistency. Take breadcrumbs in a bowl.
Add chopped parsley, dtied basil and mix.
3. Dip mozzarella pieces in the batter and coat
with breadcrumb mixture. Repeat this process once and shape with
hand.
4. Heat sufficient oil in wok and deep fry mozzarella
dlices till golden. Drain onto an absorbent paper. Cut into two
and serve hot immediately garnished with a sprig of parsley.
