METHOD
OF PREPARATION
1. Wash, peel, core and cut apples into thick slices.
Sprinkle lemon juice on apple slices.
2. preheat oven to 175 C. Place cashewnuts in a
baking tray and roast in the preheated oven till light golden. Alternatively,
roast in a pan on medium heat. Cool and crush coarsely. Mix into
the cottage cheese.
3. Heat a non-stick pan and gently poach apple
slices in orange juice for about ten minutes or until just soft.
Turn them over carefully for even cooking. Toast bread slices and
trim off sides.
4. Spread cottage cheese mixture on the toasted
bread slices and arrange cooked apple slice on top. Sprinkle cinnamon
powder and place under a hot grill or in a preheated oven(180 C)
until a light golden brown.
5. Drizzle honey on the hot toasts, cut into desired
shapes and serve hot.
